Welcome to the Amaranthia Cooking Club!

Very cool. As a poor, lazy, sleep-deprived university student living away from home, I'm always open to quick/easy/cheap recipes and cooking tips XD
Plus, I know a couple quick recipes that I could share, too. One even caught on to two of my housemates and they make it all the time now...

@chimera - that is a really neat site...i just ordered a free veg starter kit from PETA...i am not vegetarian, but i would like to see what info they send...and a lot of those recipes look really good!...thanks for sharing!

yes, i didnt want this to be a place that was too restrictive (we already have a couple more "formal" clubs)...as long as all the posts are related to cooking/kitchen then we are okay...

I have a good and easy recipe for cookies I'd like the share that's been passed down through my family.
No Bake Oatmeal Drop Cookies aka Cow Pies 1 cube margarine (8tbsp) 1/2 cup milk 2 cups sugar 3/4 cup peanut butter (smooth not chunky) 1 tsp. vanilla 2 tbsp cocoa 3 cups of quick cooking oatmeal Bring margarine, milk and sugar to a boil in a large pan on stove top. Being careful to not over-cook the butter (take it off when it starts frothing and billowing over itself) Take from fire and add peanut butter, vanilla and cocoa. Fold in oatmeal. Immediately drop mixture onto wax paper by spoonfuls. Let cool and they are ready to eat. Hope you try the recipe and enjoy them! ![]()

those look so good...we are actually doing a bake sale this week at our school so i will try these out...these look great for kids to try out, with adult supervision...and i LOVE the name cow pies...perhaps i will post pictures of some of the things the kids make this week and some of the recipes...

I pulled these hints and recipes of mine from the old recipe thread we use to have here.
Perfect Macaroni and Potato Salad Just a wonderful hint I learned from my daughter in law (she cooks for a rest home). If you add the mayonnaise while the macaroni or potatoes are still hot, it absorbs into the macaroni and potatoes. You still get all the creamy taste without all the gloppy mayonnaise. ![]() =========================================================================== This easy recipe for cream cheese sauce is a sure winner. I was going to try a different vegetable dish one Thanksgiving and my family almost came unglued. Cream cheese sauce: 1 stick (1/2 c.)Butter or margarine 1 box Philly Cream Cheese 2 garlic cloves minced Place all 3 ingredients in saucepan. Melt over low heat and whisk until well blended. Add a little milk if you want it thinner. Pour over any cooked vegetable, stir to coat veggies and serve. I like it best over brussel sprouts. Try on cauliflower, broccoli, carrots or mushrooms. My late husband disliked veggies, but said he would eat any vegetable with this on it.LOL ========================================================================= I make these every Christmas along with all kinds of truffle, cream filled, nut chews, toffees, fudge and brittles. But these are the easiest candy ever. Super Easy Mallow Treats 1 lrg bag marshmallows 2 12-16oz bag candy chips (chocolate, peanut butter, butterscotch, mint, or white chocolate) 2 cups coating (granola, coconut, nuts, crushed candy, sprinkles, trailmix, etc.) (choose whatever combination of chips and coatings you think would taste good) Melt chips in double boiler. Place 1 marshmallow on a bamboo skewer or toothpick. Dip and coat with melted chips, tapping off excess. Roll in coating. Slip off of skewer onto waxed paper, cool and eat. Keeps well for several weeks in freezer baggies. Granola butterscotch is my favorite. ![]()

They are great for kids to start learning how to cook. They are actually one of the first things I learned how to make with my mom. They're quick and easy and the recipe makes a bunch so they'll be great for a bake sale. I've never made them for someone and had them dislike them.
Speaking of cooking kids. I found a website by M&Ms that have various cooking ideas using M&M candies and other things. They are great for kids and adults that enjoy making fun food. They have some great holiday ideas as well. Check out Red and Yellow's Bright Ideas Edit: Yummy I'll have to try out your recipes soon Oracle. They look really good.

lol They too are incredibly easy for children and can make a lot in a short time. I made some for my son to take home, he finished them before he left the house.

One of my favorite "sit by the fire in the winter" recipes
Homemade Hot Chocolate Mix One box - 8 quart size - non-fat dry milk mix One package quick chocolate milk mix - medium size One pound powdered sugar One 16 ounce jar of coffee creamer Mix all ingredients in a giant bowl or stew pan Store in lidded containers To make hot chocolate just add 3 tablespoons to a coffee mug of hot water and add marshmallows or whipped cream. This is also good to put in decorated canning jars as a gift!

this is a perfect topic for me! though ive made many recipes i cant of one right now. nvmd, just did. 1.25 cups of ice with 1.5 cups of coconut juice or cocnut milk (i would suggest cocnut juice). blend it with 2 tbsp of sugar. pour it in a bowl or cup and top it off with diced jackfruit. optional: add whipped cream on top of everything.

@lrcy I've never had jackfruit. What's it like?
The coconut milk reminded me of one of my favorite deserts. One package of tapioca pudding mix cooked with 1 12oz can of coconut milk and the juice from a can of corn. When done cooking add the corn and 1 cup of shredded coconut. ![]()

jackfruit is not that sweet but still tastes good, its hard to describe though.
the desert u posted sounds wonderfully tasty. im usually better at created meals than created recipes, so if u need help in a meal u could always ask.

I love multi purpose recipes, with this one you can make a multitude of different fudges
![]() Basic Fudge Recipe 1 12oz can evaporated milk 1-1/2 cup sugar 1-1/2 cup brown sugar (packed) 2 Tbl molasses Stir till sugar melts. Cook over medium flame (without stirring, if necessary lightly run spoon over bottom of pan to prevent scortching) until temp reaches 228-230F. Remove from heat. Add desired ingredients from below then *Go to** -------------------------------------------- For peanut butter fudge add 1-1/2 cup peanut butter. For chocolate fudge add 1 cup chocolate chips and 1/4 cup butter. (Nuts or dried fruit optional) For white chocolate fudge add 1 cup white chips and 1/4 cup butter. (Any flavorings can be added to this fudge.Ex.cherry flavor with dried cherries and toasted almonds; or toasted coconut; orange zest and walnuts; dried pineapple and macadamia nuts.) --------------------------------------------- **Mix and pour into 8"x8" buttered pan. cool and cut into 1" pieces This recipe has been in my family for 4 generations. ![]()
